La nostra storia

A recipe box, a suitcase, and a very patient pot.

In 1998, Vera Bianchi left the hills outside Bologna with two things she refused to check into the hold: her mother's copper ragù pot and a tin box of handwritten recipes. She opened a five-table room off Sunder Nagar Market and started rolling pasta the only way she knew — by hand, before the market woke up.

Twenty-eight years on, the pot still simmers every afternoon. Her grandchildren run the pass, the sfoglia is still rolled thin enough to read a menu through, and the ragù is still stirred low and slow until it tastes like a Sunday should. Nothing here is rushed, and no one leaves hungry.

Matteo trained in Bologna and Modena before coming home to the family pass. He still rolls the Sunday sfoglia himself and keeps his grandmother's tin recipe box on the counter — flour-dusted, coffee-stained, and consulted daily.
