The idea

We subtract until only the good part is left.

Ost began as a single trolley outside a design studio in Richmond Town — a grinder, a two-group lever, and a hand-lettered card that read: filter, flat white, cortado.

We never added a fourth line. Instead we spent the years since making those three exact. We buy one washed lot at a time, straight from growers in the Western Ghats, and we serve it until it is gone. When the bag ends, the menu changes. Nothing sits, nothing lingers, nothing is dressed up.

The word ost is Norwegian for east — a small nod to the light, unhurried cafés we fell for in the north, rebuilt here on Bengaluru terms, with Bengaluru beans.

When the bag ends, the coffee changes.

We keep a single washed lot on the grinder and pour it through every drink until it is finished. No house blend to fall back on — just this farm, this harvest, tasting a little different each week as it opens up.

Six years pulling shots in Oslo and a national brewers-cup final later, Nadia came home to Bengaluru with one bench, one grinder, and a rule about never overcomplicating a cup.
