Our workshop
Kōbo means workshop. Ours is a narrow room off Waterfield Road where a single stockpot never fully cools.
We started in 2019 with one recipe carried back from a six-month apprenticeship in a Fukuoka noodle bar — and one stubborn belief: that a proper tonkotsu cannot be rushed. Bones go in before the market opens, and by service the broth has turned the colour of cream and the weight of a good story.
Everything else is built around that pot. Noodles are cut in-house on an old hand-crank machine, the chashu is torched to order, and the tare is blended in small batches so no two months taste quite the same. We seat twenty-eight, all at the counter, because ramen is best eaten fast and close to the fire.

Tokyo-style and amber-bright: dashi met with a house soy tare that's been ageing quietly on the pass.
PORK BONE · とんこつ
Our reason for opening. Eighteen hours of pork bones boiled to cream, black garlic oil, chashu that gives way to a spoon.
TANTAN · からみそ
Red miso and layered chili tare over minced pork and sesame — the bowl to order when the monsoon is loud.

Word from the counter
The tonkotsu is the real thing — thick enough to coat the spoon. I've been three Fridays running and the karaage is dangerous.
Sat at the counter, watched them cut the noodles, ordered the spicy miso. Left sweating and grinning. Best late dinner in the city.
The veg miso finally gave me a ramen I don't have to apologise for ordering. Deep, roasty, honest. The sake list is small and perfect.
