Our little ritual

It started with a broken freezer and a very good peach.

In 2019, Bianca Fernandes came home to Fontainhas with a second-hand batch freezer, a notebook of her nonna's Sicilian recipes, and no plan beyond "make the peaches taste like this forever." The freezer broke twice that first monsoon. The peaches did not disappoint.

Today we still churn the way she learned in Ortigia — low and slow, more milk than cream, less air, less sugar — so the flavour does the talking. Fruit comes from the Mapusa market on Friday mornings. Pistachios come from Bronte. Everything else, we make ourselves: the caramel, the roasted almond paste, the little cardamom shortbread we tuck into the cones.

Ruby Grapefruit & Campari

A grown-up sorbetto — bittersweet ruby grapefruit with a splash of Campari and a slick of orange zest. Bracing, blush-pink and just a little rebellious. Available by the scoop until Sunday.

  • Dark Choc & Salt Cup favourite 70% single-origin, dense and glossy, flaked Goan sea salt.
  • Fior di Latte The classic Just milk, cream and sugar. The purest test of a gelateria.
  • Kokum & Rose Sorbet Tart Goan kokum lifted with rose petals. Our monsoon hero.
  • Mint & Cacao Nib Cone favourite Fresh mint steeped in milk, cracked cacao nibs for crunch.
  • Fig & Honey Slow-cooked Jammy figs, Goan wild honey, a candied walnut ribbon.
  • Passionfruit Sorbet Sharp, floral and bright. Pairs impossibly well with pistachio.
  • Ruby Grapefruit This week ★ Bittersweet grapefruit, a splash of Campari, orange zest.

Cones or cups? We're firmly a "why choose" gelateria. But the sorbets do sing in a cup.

Bianca trained for two summers at a family gelateria in Ortigia, Sicily, before bringing the craft home to Goa. She still tastes every base before it goes into the case — and will absolutely talk your ear off about the difference milk fat makes.
