01 — The Drum

We kept the old machine on purpose.

Most roasteries our size run on fluid-bed or fully automated ovens. We run a 15-kilo cast-iron drum from 1974, rebuilt bearing by bearing, because iron holds heat like nothing else — it evens out the flame, forgives a slow first crack, and gives the bean a rounder, sweeter body.

Every batch is logged by hand: charge temperature, turning point, first crack, development time, drop. Nothing is roasted to a schedule. It's roasted to the bean — cracked open, cupped on a spoon, and only bagged when the table agrees.

05 — The Roaster

Ravindra "Ravi" Menon

Ravi spent eleven years cupping and grading on the estates around Chikmagalur before he ever bought a machine. He found the 1974 drum listed for scrap, hauled it to Cooke Town, and spent a monsoon rebuilding it. He still charges the first batch of every day himself.

Come by the Roastery

The bar is open at the front of the roastery. Watch a batch drop, cup what's on the drum, and take a bag home while it's still warm.
