01 — The Drum
We kept the old machine on purpose.
Most roasteries our size run on fluid-bed or fully automated ovens. We run a 15-kilo cast-iron drum from 1974, rebuilt bearing by bearing, because iron holds heat like nothing else — it evens out the flame, forgives a slow first crack, and gives the bean a rounder, sweeter body.
Every batch is logged by hand: charge temperature, turning point, first crack, development time, drop. Nothing is roasted to a schedule. It's roasted to the bean — cracked open, cupped on a spoon, and only bagged when the table agrees.
